Grab Your Dancing Shoes

We grow a lot of green peppers in our garden every summer season. They are inexpensive and you only need a few plants. When I make stuffed peppers, I like to make them in big batches as they freeze well for future meals.

Spoon mixture into each shell. Bake in a preheated 350 degree oven for 35 minutes. Remove and sprinkle cheddar cheese on top. Place back into the oven for 5 minutes or until cheese has melted. Makes 6 servings.

Putting your coolers in the shade and covering them with a blanket will make the ice last longer. Another way to save money with ice is, a couple days before you are to leave for the trip fill milk jugs or 2 liter pop bottles with water and freeze. Right before you leave on your trip cut the jugs and drop the cubes of ice into the cooler. Another use for this frozen water is to leave it in the jugs and as it thaws you have drinking water.

First we’ll start on the meat. Now, most of us have some kind of leftovers in our fridge, but if you don’t have anything already cooked just cook some taco recipes or pork. The easiest (and healthiest) way to do this is to simply cook the meat in a little bit of simmering water, then just strain out the meat when it’s done.

The “dinges,” include dulce de leche, Belgian chocolate fudge, walnuts, bananas, whipped cream, etc. And, do not forget the scoop of vanilla ice cream! What kind of waffle would it be? Besides the traditional sweet waffles, there is a savory waffle, but it is only for the adventurous. It has pulled BBQ pork and coleslaw slathered on top. Try it before you judge!

Mexican – The men dress in ponchos and the women in bright colored Mexican fiesta dress. Wear Sombreros and dance the Samba all night long. The food of choice is of course tortillas, tacos pollo and chilli while everybody drink corona and lime or tequila. Your guests will love a Mexican theme party.

The Screaming Yak is located on 118 West Francis and is one of the best neighborhood bars in the area. The north has a couple of bars where people go to watch games and drink beer with friends. One is the Yak and the other is The Swinging Doors. I will talk about them in a future article.

Grab a warm tortilla and top with the chicken, sliced avocado and fresh salsa. Simple, delicious, fresh. You can also slam two tacos for less than the calories, carbs and sodium in a so-called “healthy” frozen dinner. Why are you still reading? Make this now.
